With Mother’s Day fast approaching, why not treat your lovely Mum to a delicious breakfast in bed? Sunday is the perfect day to relax and sleep in, so make it that bit extra-special by surprising her with this thoughtful gesture. It’ll kick-start Mothering Sunday perfectly, and make her feel loved and appreciated from the moment she first wakes up in the morning. After all, if you can’t spoil your Mum on Mother’s Day, when can you?!
If you fancy making her something a bit more sophisticated than a sausage sandwich, but still just as delicious and filling, why not try our recipe for eggs benedict? Layered with creamy avocado and smoked salmon, this breakfast really does feel indulgent, when it’s actually full of healthy fats and protein that should set your Mum up for the day nicely. The recipe below serves two people, because we can guarantee you’ll fancy tucking in to a little portion yourself after you’ve surprised your dear old Mum. You deserve it!
Ingredients (Serves 2)
2 tbsp Hollandaise sauce
4 large eggs
1/2 tsp white wine vinegar
2 English muffins, halved (you could also use crumpets, ciabatta, or crusty bread)
1 pack smoked salmon
Black pepper (optional)
Cut your avocados in half and remove the skin and stone. Place in a bowl and mash gently with the back of a fork.
Start first by poaching your eggs. Fill a small saucepan with an inch or 2 of cold water, and heat on high until the water starts simmering. Stir in the vinegar.
Crack your first egg into a small jug and gently pour the egg into the pan, keeping the spout close to the surface of the water. Repeat for the second egg and cook for 4-5 minutes (the egg white should be cooked but the yolks still runny). Repeat this step for your third and forth eggs.
Whilst poaching your eggs, toast your English muffin gently under the grill until golden. Distribute your avocado and smoked salmon evenly on top of each muffin half.
Using a slotted spoon to drain any excess water, remove your poached eggs from your saucepan and place on top of the smoked salmon.
Place a small dollop of Hollandaise sauce on top of each egg. Sprinkle over your dill and black pepper to serve.
